1 1/2 Cups warm water
1 egg yolk room temp.
1 Tbsp oil
3 1/2 Cups bread flour
2 Tbsp sugar
1 tsp salt 1/8 tsp white pepper - I just use regular
2 tsp yeast
Put all of the ingredients in your bread maker in the order given. Place on the Dough Setting.
After the dough is ready, place the dough on a lightly floured surface & cut into 16 pieces. Roll each piece into at least a 16" rope; twist the ends once then fold down over the loop. (I hope you can get that?) Place on a greased baking sheet 1 1/2 inches apart. Brush with a glaze of one egg white & one Tablespoon water whisked together. Sprinkle with coarse salt. Cover gently & let rise until double- about 30 minutes. Bake at 375 for 15-20 minutes.
Variation I have never tried but sounds amazing:
Pizza pretzels-
Add 1 cup think sliced pepperoni & 2 Tbsp. Parmesan cheese to the dough ingredients.
Cinnamon pretzels-
brush hot pretzel with butter then dip in cinnamon & sugar.

ok, so the egg yolk at room temperature made me think of a funny story. once when i was a teenager my mom was in a panic to get a dinner over to a ward member and realized half way through that the eggs were supposed to be room temperature. oh no! so, her solution? she needed four eggs, two eggs in each of our bras! yup, that's right, she made me put cold eggs (say that with a shiver!) under my breasts to warm them up! it took a while for them to warm up too, i remember walking carefully around the house hoping that they wouldn't break inside my bra! i will never forget, or forgive her for this. in fact, i think i'm calling my therapist right now.
